Borsari Broccoli Florentine Bisque
A delicious soup that’s guaranteed to have you spooning the bowl until the last drop.

Ingredients
- One package of Baby Spinach
- 4 tbsp. of Butter
- 1/2 of a medium sized Onion
- 5 tbsp. of All-Purpose Flour
- 4 cups of Vegetable Stock
- 4 packed cups of Broccoli Florets
- 1/2 cup of Heavy Cream
- Borsari Cracked Pepper
Optional
- For taste add plain Greek Yogurt and Lemon Zest
Instructions

Open your bag of spinach and place it into a microwave safe bowl, microwave for approx. 2 minutes or until the spinach becomes wilted.

Melt your butter into a medium/large sauce pan and then add in your onions, heat until translucent

Add in flour and stir consistently for about 1 minute

Whisk in your vegetable stock and stir in your broccoli florets, bring your mixture to a boil

After your mixture is brought to a boil, reduce to a simmer and cook until the broccoli is tender. This will take approx. 10 minutes, stir occasionally during this time.

Squeeze excess liquid from your spinach after it has cooled, stir in the spinach to your mixture and add in your heavy cream and Borsari Cracked Pepper.

After mixed, place the soup in small batches within a blender until smooth.

Season with additional Borsari Cracked Pepper to your liking, at this time you can now opt. to add in Greek yogurt and lemon zest as well when served.
