This Overnight Roast Chicken is the definition of set-it-and-forget-it cooking. Marinated overnight with Borsari Seasoning and roasted to golden perfection, the result is tender, juicy meat with crispy, flavorful skin. Ingredients
- 1 Whole Chicken (about 4–5 lbs)
- 3 tbsp Borsari Olive Oil
- 3–4 tsp Borsari Original Seasoning
- 1 Lemon, halved
- Fresh Herbs (thyme, rosemary, or parsley), for stuffing
- Freshly ground black pepper, to taste
Instructions
- Pat chicken dry with paper towels. Rub all over with Borsari Olive Oil and season generously with Borsari Seasoning and black pepper.
- Stuff the cavity with lemon halves and fresh herbs.
- Cover and refrigerate overnight to marinate.
- When ready to cook, preheat oven to 425°F. Place chicken on a roasting rack inside a pan.
- Roast for 1 to 1-1/4 hours, or until internal temperature reaches 165°F at the thickest part of the thigh.
- Remove from oven, let rest 10 to 15 minutes, then carve and serve.
