Ingredients
- 2 tbsp Borsari Extra Virgin Olive Oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, chopped
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (28 oz) can crushed tomatoes
- 2 cups vegetable or chicken broth
- 2 tsp Borsari Savory Seasoning
- 1 tsp chili powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- Optional toppings: avocado, cilantro, shredded cheese, sour cream
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened, about 3 minutes.
- Add Vegetables: Stir in sweet potatoes and bell pepper. Cook 5 minutes, stirring occasionally.
- Season & Simmer: Add black beans, kidney beans, tomatoes, broth, Borsari Savory Seasoning, chili powder, and smoked paprika. Stir well.
- Cook: Bring to a boil, then reduce heat. Cover and simmer for 25 to 30 minutes, until sweet potatoes are tender and flavors meld.
- Finish: Taste and adjust seasoning as needed. Serve warm with your favorite toppings.
