Prep Time: 10 mins
Cook Time: 25 mins
Servings: 6

Ingredients

  • 2 tbsp Borsari Savory Seasoning
  • 2 tbsp Borsari Olive Oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 4 cups pumpkin purée (fresh roasted or canned)
  • 4 cups vegetable broth
  • 1 cup heavy cream (or unsweetened coconut milk for dairy-free)
  • 2 tbsp maple syrup (optional, to taste)
  • Kosher salt & freshly ground black pepper, to taste
  • Pumpkin seeds & chopped fresh herbs (sage/parsley), for garnish

Instructions

  1. Warm the Borsari Olive Oil in a large pot over medium heat. Add onion, carrots, and garlic; cook until softened, about 5 minutes.
  2. Stir in Borsari Savory Seasoning and cook 1 minute to bloom the herbs.
  3. Add pumpkin purée and vegetable broth; stir, then bring to a gentle simmer. Cook uncovered 15 minutes, stirring occasionally.
  4. Blend until smooth with an immersion blender (or carefully in batches in a blender). Return to pot.
  5. Stir in cream (or coconut milk) and maple syrup if using. Season to taste with salt and pepper. Warm through and serve.
  6. Ladle into bowls and garnish with pumpkin seeds and fresh herbs.

Pro Tips

  • Roast for depth: If starting with fresh pumpkin, roast wedges at 400°F until tender for a richer, slightly caramelized flavor.
  • Blend of squash: Swap half the pumpkin for butternut for extra silkiness.
  • Heat or creaminess: Add a pinch of cayenne for warmth or finish with a swirl of crème fraîche or coconut cream.
  • Make-ahead: Soup keeps 4 days refrigerated; add cream just before serving for best texture.
