Equipment

Ingredients
- 1 Whole Chicken (4–5 lbs)
- 1/4 cup Olive Oil or melted Butter
- 2 tbsp Seasoning Blend (such as salt, pepper, and herbs)
- 1 Lemon, halved
- 1 Onion, quartered
- 3–4 Garlic cloves, smashed
- Fresh herbs (rosemary, thyme, or parsley), optional
Instructions
- Preheat oven to 375°F (190°C). Place rack in roasting pan.
- Rinse chicken inside and out, then pat dry with paper towels.
- Rub chicken all over with olive oil or butter. Season generously inside and out with seasoning blend.
- Stuff cavity with lemon, onion, garlic, and herbs if using.
- Tie legs together with kitchen twine and tuck wings under the body.
- Place chicken on roasting rack, breast side up. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
- Let rest for 10–15 minutes before carving.
- Serve warm with pan juices or your favorite sides.
