Equipment

Ingredients

  • 1 Whole Chicken (4–5 lbs)
  • 1/4 cup Olive Oil or melted Butter
  • 2 tbsp Seasoning Blend (such as salt, pepper, and herbs)
  • 1 Lemon, halved
  • 1 Onion, quartered
  • 3–4 Garlic cloves, smashed
  • Fresh herbs (rosemary, thyme, or parsley), optional

Instructions

  1. Preheat oven to 375°F (190°C). Place rack in roasting pan.
  2. Rinse chicken inside and out, then pat dry with paper towels.
  3. Rub chicken all over with olive oil or butter. Season generously inside and out with seasoning blend.
  4. Stuff cavity with lemon, onion, garlic, and herbs if using.
  5. Tie legs together with kitchen twine and tuck wings under the body.
  6. Place chicken on roasting rack, breast side up. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
  7. Let rest for 10–15 minutes before carving.
  8. Serve warm with pan juices or your favorite sides.
