Ingredients

  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tbsp Borsari Olive Oil
  • Juice of 1 lemon
  • 1 tbsp Borsari Savory Seasoning (or Original Seasoning)

Instructions

  1. Preheat grill (or oven to 425°F ).
  2. Arrange bell peppers, zucchini, onion, and cherry tomatoes on a baking sheet or grill basket.
  3. Drizzle with olive oil, squeeze lemon juice over the top, and sprinkle evenly with Borsari Seasoning. Toss gently to coat.
  4. Grill or roast for 15 to 20 minutes, turning once, until vegetables are tender and lightly charred.
  5. Transfer to a serving platter, add an extra squeeze of lemon, and serve warm.
