Ingredients
- 2 Tbsp Borsari Olive Oil
- 1 medium onion, chopped
- 3 medium carrots, peeled and diced
- 3 celery stalks, diced
- 2 garlic cloves, minced
- 1 cup uncooked wild rice, rinsed
- 8 cups chicken broth
- 3 cups cooked chicken breast, shredded
- 1 cup heavy cream (or half-and-half for a lighter version)
- 2 tsp Borsari Original Seasoning
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the Borsari Olive Oil over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 - 7 minutes. Stir in garlic and cook for 1 more minute.
- Add wild rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until rice is tender.
- Stir in shredded chicken, cream, Borsari Original Seasoning, thyme, salt, and pepper. Simmer uncovered for 10 more minutes to blend flavors.
- Adjust seasoning as needed. Garnish with fresh parsley and serve warm.
