Borsari Wild Rice and Chicken Soup
Warm up with a bowl of our Wild Rice and Chicken Soup
Servings: 4 People
- 1 cup Wild Rice Cooked
- 1 Large Chicken Breast Seasoned with Borsari Original Seasoning Cooked and Cubed
- 8 stalks Celery Finely Chopped
- 1 tbsp Borsari Olive Oil
- 4 Scallions Chopped including green parts
- 1 tbsp Flour
- 2 Carrots Grated
- 4 cups Chicken Stock
- 1/2 cup plain yogurt
- 1 cup Grated Cheese
- Borsari Original Seasoning per taste
Trim 8 stalks of celery and finely chop. Place in a pot with Borsari Olive Oil with medium heat. Cover for 5 minutes or until tender.
Chop 4 scallions including the greens and place in pot with celery for one minute. Then stir in 1/2 tbsp of flour for another minute.
Grate 2 carrots and add to the pot.
Add chicken with 4 cups of chicken stock to pot and bring to a boil.
Reduce heat and simmer for 20 minutes
Then add the wild rice and bring to a boil.
Remove from heat and fold in 1/2 cup yogurt.
Serve with Grated Cheese and Season as needed with Borsari Original Seasoning.
