Borsari Wild Rice and Chicken Soup

  • 1 cup Wild Rice Cooked
  • 1 Large Chicken Breast Seasoned with Borsari Original Seasoning Cooked and Cubed
  • 8 stalks Celery Finely Chopped
  • 1 tbsp Borsari Olive Oil
  • 4 Scallions Chopped including green parts
  • 1 tbsp Flour
  • 2 Carrots Grated
  • 4 cups Chicken Stock
  • 1/2 cup plain yogurt
  • 1 cup Grated Cheese
  • Borsari Original Seasoning per taste


  • Trim 8 stalks of celery and finely chop. Place in a pot with Borsari Olive Oil with medium heat. Cover for 5 minutes or until tender.
  • Chop 4 scallions including the greens and place in pot with celery for one minute. Then stir in 1/2 tbsp of flour for another minute.
  • Grate 2 carrots and add to the pot.
  • Add chicken with 4 cups of chicken stock to pot and bring to a boil.
  • Reduce heat and simmer for 20 minutes
  • Then add the wild rice and bring to a boil.
  • Remove from heat and fold in 1/2 cup yogurt.
  • Serve with Grated Cheese and Season as needed with Borsari Original Seasoning.
