Ingredients

  • 2 Tbsp Borsari Olive Oil
  • 1 medium onion, chopped
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 cup uncooked wild rice, rinsed
  • 8 cups chicken broth
  • 3 cups cooked chicken breast, shredded
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 tsp Borsari Original Seasoning
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the Borsari Olive Oil over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 - 7 minutes. Stir in garlic and cook for 1 more minute.
  3. Add wild rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until rice is tender.
  4. Stir in shredded chicken, cream, Borsari Original Seasoning, thyme, salt, and pepper. Simmer uncovered for 10 more minutes to blend flavors.
  5. Adjust seasoning as needed. Garnish with fresh parsley and serve warm.
