Ingredients
- 6 bone-in, skin-on chicken thighs (or drumsticks)
- 2 tbsp Borsari Original Seasoning
- 2 tbsp Borsari Olive Oil
- 1 onion, sliced
- 2 bell peppers (red and green), sliced
- 8 oz mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup dry red wine (or chicken broth)
- 1 (28 oz) can crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp capers (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry and season with Borsari Original Seasoning.
- Heat a skillet over medium-high heat with Borsari Olive Oil. Brown chicken on all sides, about 8 minutes total. Transfer to the slow cooker.
- In the same skillet, sauté onions, peppers, and mushrooms for 5 minutes. Add garlic and cook for 1 more minute.
- Deglaze the pan with red wine (or broth), scraping up browned bits. Pour mixture into the slow cooker.
- Add crushed tomatoes, oregano, basil, and capers to the slow cooker. Stir gently to combine.
- Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until chicken is tender and cooked through.
- Remove lid for the last 30 minutes if you prefer a thicker sauce. Taste and adjust seasoning if needed.
- Serve hot, garnished with parsley, over pasta, polenta, or with crusty bread.
