Ingredients

  • 6 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 tbsp Borsari Original Seasoning
  • 2 tbsp Borsari Olive Oil
  • 1 onion, sliced
  • 2 bell peppers (red and green), sliced
  • 8 oz mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 cup dry red wine (or chicken broth)
  • 1 (28 oz) can crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp capers (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken dry and season with Borsari Original Seasoning.
  2. Heat a skillet over medium-high heat with Borsari Olive Oil. Brown chicken on all sides, about 8 minutes total. Transfer to the slow cooker.
  3. In the same skillet, sauté onions, peppers, and mushrooms for 5 minutes. Add garlic and cook for 1 more minute.
  4. Deglaze the pan with red wine (or broth), scraping up browned bits. Pour mixture into the slow cooker.
  5. Add crushed tomatoes, oregano, basil, and capers to the slow cooker. Stir gently to combine.
  6. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until chicken is tender and cooked through.
  7. Remove lid for the last 30 minutes if you prefer a thicker sauce. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with parsley, over pasta, polenta, or with crusty bread.
