Ingredients
- 2 Cornish Game Hens (about 1–1.5 lbs each)
- 2 tbsp Borsari Olive Oil
- 2–3 tsp Borsari Original Seasoning
- Freshly ground black pepper, to taste
- Fresh Herbs (thyme, rosemary, or parsley), for garnish
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F. Line a roasting pan with foil or place a rack inside.
- Pat hens dry with paper towels. Rub all over with Borsari Olive Oil and season generously with Borsari Seasoning and black pepper.
- Tie the legs with kitchen twine and tuck the wings under for even cooking.
- Place hens breast-side up in the prepared roasting pan.
- Roast for 45 to 55 minutes, or until internal temperature reaches 165°F at the thickest part of the thigh.
- Remove from oven, let rest 10 minutes, then serve with lemon wedges and fresh herbs.
