Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 Tbsp Borsari Olive Oil, divided
  • 2 tsp Borsari Orange Ginger Seasoning
  • 1 red bell pepper, sliced
  • 1 cup snap peas (or green beans)
  • 1 medium carrot, thinly sliced into matchsticks
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup baby tomatoes, halved
  • 2 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 3 cups cooked jasmine or basmati rice
  • 2 green onions, sliced
  • 1 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1 Tbsp sesame seeds (for garnish)
  • Lime wedges, for serving

Instructions

  1. Season the shrimp: Toss shrimp with 1 tsp Borsari Orange Ginger Seasoning and 1 Tbsp olive oil.
  2. Sear the shrimp: Heat a large skillet or wok over medium-high heat. Add shrimp and cook 1 to 2 minutes per side, until pink and opaque. Remove and set aside.
  3. Cook the veggies: In the same skillet, add remaining olive oil. Stir-fry bell pepper, snap peas, carrots, and corn for 3 to 4 minutes, until crisp-tender. Add garlic and fresh ginger; cook 1 minute more.
  4. Build the sauce: Stir in soy sauce, rice vinegar, honey, and 1 tsp Borsari Orange Ginger Seasoning. Toss to coat veggies evenly.
  5. Finish the dish: Return shrimp to the skillet along with cooked rice and halved baby tomatoes. Toss gently until everything is warmed through and coated in sauce.
  6. Serve: Garnish with green onions, sesame seeds, and lime wedges.
