Ingredients

  • 2 Tbsp Borsari Olive Oil
  • 1 lb ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 6 cups chicken or beef broth
  • 2 Tbsp tomato paste
  • 2 tsp Borsari Italian Herb Seasoning
  • 1 tsp Borsari Savory Seasoning
  • 1 tsp sugar (optional, balances acidity)
  • 2 cups uncooked pasta (mafaldine, fusilli, or broken lasagna noodles)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Brown the meat: Heat Borsari Olive Oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  2. Sauté aromatics: Add onion and cook until softened, about 5 minutes. Stir in garlic and cook 1 minute more.
  3. Build the base: Stir in crushed tomatoes, broth, tomato paste, Borsari Italian Herb Seasoning, Borsari Savory Seasoning, and sugar. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Cook the pasta: Add pasta directly to the soup and simmer until tender, about 10 minutes, stirring occasionally to prevent sticking.
  5. Finish with cheese: Stir in ricotta, mozzarella, and Parmesan until melted and creamy.
  6. Serve: Ladle into bowls and garnish with fresh basil or parsley.
