Ingredients
- 2 lbs fresh spinach (or 3 packages frozen, thawed and drained)
- 2 tbsp Borsari Olive Oil
- 2 tbsp unsalted butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp Borsari Original
- ½ tsp freshly ground black pepper
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ tsp ground nutmeg (optional but recommended)
Directions
- Prep the spinach: If using fresh spinach, blanch it in boiling water for 1 minute until wilted, then drain and squeeze out as much moisture as possible. Roughly chop and set aside.
- Sauté the aromatics: In a large skillet over medium heat, warm Borsari Olive Oil and butter. Add the onion and cook 3 to 4 minutes until soft and translucent. Stir in the garlic and cook 1 minute more.
- Make it creamy: Pour in the heavy cream and season with Borsari Original pepper, and nutmeg. Bring to a gentle simmer for 2 to 3 minutes, stirring occasionally.
- Add the spinach: Fold in the spinach and cook another 3 to 4 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Finish with Parmesan: Stir in the grated Parmesan until smooth and creamy. Taste and adjust seasoning as desired.
