Ingredients
- 2 tbsp Borsari Extra Virgin Olive Oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, diced
- 1 zucchini, chopped
- 1 (14 oz) can diced tomatoes
- 6 cups vegetable or chicken broth
- 1 cup green beans, trimmed and cut
- 1 cup corn kernels (fresh or frozen)
- 2 tsp Borsari Original Seasoning
- ½ tsp dried thyme
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
- Add Potatoes & Zucchini: Stir in potatoes and zucchini, cooking another 3 minutes.
- Simmer: Add diced tomatoes, broth, green beans, corn, Borsari Original Seasoning, and thyme. Stir well.
- Cook: Bring to a boil, then reduce heat and simmer uncovered for 25 to 30 minutes, until vegetables are tender.
- Serve: Adjust seasoning if needed. Garnish with parsley and serve hot.
