Ingredients

  • 2 tbsp Borsari Extra Virgin Olive Oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 zucchini, chopped
  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels (fresh or frozen)
  • 2 tsp Borsari Original Seasoning
  • ½ tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
  2. Add Potatoes & Zucchini: Stir in potatoes and zucchini, cooking another 3 minutes.
  3. Simmer: Add diced tomatoes, broth, green beans, corn, Borsari Original Seasoning, and thyme. Stir well.
  4. Cook: Bring to a boil, then reduce heat and simmer uncovered for 25 to 30 minutes, until vegetables are tender.
  5. Serve: Adjust seasoning if needed. Garnish with parsley and serve hot.
