Borsari Fried Zucchini Crisps

Crispy on the outside, tender on the inside, these Parmesan-crusted zucchini slices are an easy appetizer or side that comes together in minutes. Finished with a touch of Borsari Cracked Pepper, they’re simple, savory, and totally irresistible.

Ingredients

  • 1/2 cup vegetable oil
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 to 2 zucchini, sliced to desired thickness
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Borsari Cracked Pepper, to taste

Instructions

  1. Heat vegetable oil in a large pan or skillet over medium heat.
  2. In a large bowl, combine the panko breadcrumbs and Parmesan cheese.
  3. Dredge the zucchini slices in flour, dip into the beaten eggs, then coat evenly in the panko mixture.
  4. Add the coated zucchini slices to the skillet and cook until golden and crispy.
  5. Transfer finished slices to a paper towel–lined plate to absorb excess oil.
  6. Finish with Borsari Cracked Pepper to taste.
