Borsari Fried Zucchini Crisps

Crispy on the outside, tender on the inside, these Parmesan-crusted zucchini slices are an easy appetizer or side that comes together in minutes. Finished with a touch of Borsari Cracked Pepper, they’re simple, savory, and totally irresistible.
Ingredients
- 1/2 cup vegetable oil
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 to 2 zucchini, sliced to desired thickness
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- Borsari Cracked Pepper, to taste
Instructions
- Heat vegetable oil in a large pan or skillet over medium heat.
- In a large bowl, combine the panko breadcrumbs and Parmesan cheese.
- Dredge the zucchini slices in flour, dip into the beaten eggs, then coat evenly in the panko mixture.
- Add the coated zucchini slices to the skillet and cook until golden and crispy.
- Transfer finished slices to a paper towel–lined plate to absorb excess oil.
- Finish with Borsari Cracked Pepper to taste.
